Peach, rocket and blue cheese pizza

I LOOOOOOOVE making pizza at home. It's more nutritious than you'll get at any takeaway, fun to do and delicious to eat! I like to play around with toppings and this one is top(ping) of my list. Bursting with colour, the sweet peaches and salty blue cheese combine to create a glorious party in the mouth. Served with some greens and olive oil and balsamic vinegar for crust-dipping, this recipe adds some sexy Italiano luxury to a weekday evening.

200g plain or wholemeal flour
175g plain Greek yoghurt
½ teaspoon baking powder
200g (1/2 tin) peaches in juice, drained (or 1-2 fresh peaches, sliced)
30g Stilton cheese, crumbled
½ red onion, thinly sliced
½ ball mozzarella, sliced
Handful of fresh basil
Handful of rocket leaves
Extra virgin olive oil
Salt and pepper

How to make it…
1. Preheat the oven to 180c. Mix the flour, Greek yoghurt, baking powder, salt, pepper and a drizzle of extra virgin olive oil in a bowl until it forms a dough.
2. Roll out dough to 1-2cm thick. Place on a baking tray and bake for 8-10 minutes until just starting to brown.
3. Remove from the oven and arrange the peach, mozzarella slices and red onion to cover. Crumble over the stilton cheese and return to the oven for 10 minutes.
4. Once cooked, scatter over the fresh basil and rocket, drizzle with olive oil, season and serve.
